Mediterranean Chicken Pita Wraps

Ingredients:

For the Chicken:

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 1 tablespoon olive oil
  • Juice of 1/2 lemon
  • 1 garlic clove, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For the Wraps:

  • 4 whole-wheat pitas or flatbreads
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup crumbled feta
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons fresh dill or parsley, chopped

Instructions:

  1. Cook the Chicken:
    Toss sliced chicken in olive oil, lemon, garlic, oregano, salt, and pepper. Grill or sauté over medium-high heat until golden and cooked through, about 8–10 minutes.
  2. Make the Yogurt Sauce:
    Mix Greek yogurt with dill (or parsley), a pinch of salt, and a splash of lemon juice.
  3. Assemble the Wraps:
    Warm the pitas and layer with chicken, veggies, feta, and a generous dollop of yogurt sauce.

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar or glaze
  • Sea salt and black pepper to taste
  • Optional: 1/4 cup thinly sliced red onion

Instructions:

  1. In a large bowl, gently toss together the watermelon, feta, and basil.
  2. Drizzle with olive oil and balsamic vinegar.

Cook Time: 5 minutes

Ingredients:

  • 2 ripe peaches, halved and pitted
  • 1 tablespoon olive oil
  • 1 avocado, sliced
  • 4 cups arugula or baby spinach
  • 1/4 cup goat cheese or vegan alternative
  • 2 tablespoons toasted almonds or walnuts

For the Balsamic Glaze:

  • 1/4 cup balsamic vinegar
  • 1 teaspoon honey or maple syrup

Instructions:

  1. Preheat a grill or grill pan. Brush peach halves with olive oil and place on the grill cut-side down for 2–3 minutes until grill marks appear.
  2. In a small saucepan, heat balsamic vinegar and honey over medium-low heat until reduced by half, about 5–7 minutes. Let cool.
  3. In a salad bowl, arrange arugula, avocado slices, grilled peaches, cheese, and nuts.
  4. Drizzle with balsamic glaze and serve immediately.
